Eggnog Cake

I'm running a day behind, due to an Ikea bed putting together emergency last night, but will make up for it with two posts tomorrow. Consider this Eggnog Cake post day 13 of the advent calendar Christmas posts.
 I love love LOVE this recipe and not just because I love eggnog. The cake turned out so lovely and fluffy, with yummy hints of vanilla and nutmeg and a subtle eggnog flavour.
The coconut white chocolate tree toppers were fun and pretty way to decorate the cake, click back to day twelves post for a how to guide on make them.

For the Eggnog Cake
1 cup eggnog (1/2 cup + 1/2 cup)
3 eggs
2 teaspoons vanilla extract
280 grams butter (softened)
2 1/2 cups cake flour
1 1/2 cups sugar
1 tablespoon baking powder
1teaspoon ground nutmeg

To make the cake- preheat oven to 180 degrees c.  Butter and flour two 8 inch round cake tins.

In a medium bowl combine the 1/2 cup eggnog, eggs and vanilla and whisk lightly.

In your mixer bowl add flour, sugar, nutmeg and baking powder and mix on low to combine.

Add the remaining half of the eggnog and the butter to the flour mixture and beat for 2 minutes on mid speed. 

Pour in the egg mixture a third at a time beat for 20 seconds after each addition, scraping down the sides of the bowl as you go. The mixture should be light and fluffy.

Divide the mix between the two cake pans and level out. Bake the cakes for 35-40 minutes, until a skewer inserted into the center comes out clean. 

Allow to cool in tins for 10 minutes before turning out into wire racks to cool completely.

For the Eggnog Buttercream
250 grams butter
4 cups icing sugar
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
3 tablespoons eggnog

To make the Eggnog Buttercream- beat the butter in your mixer bowl pale and smooth.

Add the remaining ingredients to the butter and beat the frosting until light and fluffy. Add a little more icing sugar or eggnog to get to a spreadable consistency. 
To decorate the cake- trim the raised tops off of the cakes to get two even layers.

Spread a thick layer of frosting over the cut top of the first cake layer. 
 Sandwich on the second layer of cake.
Cover the top and sides of the cake with frosting, using your knife to create swirls of buttercream. 
Top the cake with coconut ice cream cone Christmas trees and a little extra coconut and cachous if you like.

    i demand you pay me and my husband, as well as our 4 aging parents together, $50 million dollars each for this persecution pice of cake. the reason is, kara conaty went to make this cake immediately after finding out that me and my husband had some yummy egg nog, which is 1/2 cup for the serving size as stated on the bottle, which was very expensive and fresh. however we got really sick from it because the fresh cream from braum's was put onto the floor first before mixing it into the egg nog. this is all true. it happened on 12/24/2014. therefore, immediately she went to make it up, to make a white christmas eggnog cake by just pouring some egg nog into the batter, and into the creamy frosting, and then call it egg nog cake, with faint egg nog flavor, her words. therefore, this is contempt. on top of that, she then went to decorate the cake with frosting all over the place, and inverted 5 ice cream cones on the top to make them into christmas trees. then put frosting all over it, and then sprinkle it with lots and lots of coconut flakes, and it was published today early morning, which is 12/26/2014. by the time i found it, it was 9:00am. however, on her recipe, she messed with the date to say it was done on 12/13/2014. i have proof. this is all true. on top of that, the reason why she used egg nog is clear, to tell the world we got diarrhea sick from the very expensive braum's egg nog. the ice cream cone is also clear. this is because i got some ice cream from baskin robbins and asked them to put it into a cup, and then put the ice cream cone on top of it. upon doing so, the cashier told me it costs $0.25 extra. i found that incredulous. this is when the indian middle age man owner came forward and told me that they are charging extra for the ice cream cone, when i already paid for it. this is because a cup is free, the cone comes with the ice cream at no extra cost. however, because he is indian, and he realizes that i ask for the ice cream cone when i get it in a cup, which is normal for everyone, he thought it was greedy of me, and therefore made up an extra charge for it, which i sued him over it. this is why kara conaty found it funny that i was publicly humiliated by asking for an extra ice cream cone, so she thought, and therefore, in her picture, and i have a copy. she went to put one cone in the center, and 4 surrounding it, to say chinese feng shui numerology 14. this is all true.
